Velvety Smooth Sweet Potato Bisque


Another Crock Pot Recipe
This is so easy and produced a thick, velvety soup.
4 sweet potatoes
3 cups chicken broth
salt and pepper
nutmeg
3 T brown sugar
1 T cinnamon
1/2 cup cream
I microwaved 3 sweet potatoes after piercing them with a fork. Cook them 8 - 10 min until mostly cooked through.
Peel 1 additional sweet potato, chop into 1 inch pieces.
Add 3 cups chicken stock to a crock pot. Set on HIGH. Add broth, cubed sweet potatoes and microwaved sweet potatoes that have been scooped out. Season with salt, pepper and nutmeg. Cook until all sweet potatoes are cooked through.
Blend mixture in a blender or with an immersion blender. Add brown sugar and cinnamon. Return to crock pot, set on LOW.
Add cream. Reheat and serve.
