It's Officially Summer


So, the watermelon is finally sweet and the corn is tender and lovely.  I bought 5 ears last night, roasted them and then came up with a delicious recipe...
I actually microwaved the shucked corn for 12 min in the microwave.  Then I cut the corn off the cob. (Jon and Ash prefer it off the cob).  I melted 2 pats of butter in a large skillet, added a chopped shallot and diced red pepper and sauteed until tender.  Then I added the corn, salt, pepper and a sprinkling of garlic (very little).
I heated it all up and it was delicious.  We like just plain grilled corn, as well, but I was looking for a "do ahead" recipe where the clean-up was mostly done ahead of time.
It was really yummy.
