Zucchini Spice Cake

Here a very delicious recipe for spice cake.  The zucchini is flavorless and provides moisture and nutrients, but no flavor.  The spices- cinnamon, cloves and vanilla provide all the flavor and the frosting on top makes it that much more delicious.  You could skip the frosting altogether, but we love frosting, it gives us a reason to eat cake!  If you chill the cake after frosting it, it becomes like fudge candy.

1 cup brown sugar
6 T butter
1 tsp vanilla
1 egg
1 egg white
1 1/2 cups flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground cloves
1 1/2 cups zucchini, grated

Frosting- 1 cup + 2 T powdered sugar, 2 T softened butter, 1/4 tsp cloves, 5 tsp milk

Heat oven to 350.  Using an electric mixture, beat brown sugar, butter, vanilla, egg, egg white.  Stir in flour, baking soda, cinnamon and cloves.
Stir in zucchini.  Batter will be very thick.
Spread in pan, I used a greased pan that was also lined with parchment -  9x9 square pan and it was thinner than a brownie, but good.  You could use a loaf pan or a smaller pan, its is up to you.
Bake for 30 min until a toothpick comes out clean for a 9" square pan.
Cool in pan 10 min, then remove from pan.

Make frosting by beating with sugar, butter, cloves and milk.  Spread on cooled cake.
Place frosted cake in fridge and chill.
