Recipe: Pumpkin Apple Muffins


Moist and delicious.  
These muffins have a cinnamon streusel topping that add a little texture to an otherwise yummy muffin.  When looking for a pumpkin recipe, I like to find one that uses the entire 15 oz can, rather than a cup or a cup and a half.  I hate to throw away the remainder of the can, or freeze it.  Then I have 1/2 a cup of pumpkin to use...
Anyway, here is the yummy recipe:
2 1/2 cups flour
2 cups sugar
1 T pumpkin pie spice (or my own mixture of cinnamon, nutmeg and cloves)
1 tsp baking soda
1/2 tsp salt
1 15 oz can pumpkin, pureed
1/2 cup vegetable oil
1 cup applesauce (can use chopped apples)

Streusel Topping:
2 T flour
1/4 cup sugar (can use brown sugar)
1/2 tsp cinnamon
4 tsp butter
1/4 cup oats

Mix flour, soda, sugar and salt together in a bowl or on a sheet of waxed paper.
Mix eggs, oil, pumpkin, pumpkin pie spice and applesauce
Combine the two mixtures
Spoon into paper lined muffin cups.

Make topping:
Combine all ingredients in a medium bowl except the butter.
Cut in slices of butter, until mixture is crumbly and crummy....
Sprinkle topping over the muffins and place in oven.

Bake at 350 for 25 min until cooked and spring back when touched.
