This season there is a proliferation of pumpkin recipes. Pumpkin, like all the squashes, is so healthy, so good for you. Americans usually only think of pumpkin around Thanksgiving, but it really is so easy, so inexpensive it should be more prevalent....
Here is a very easy recipe using prepared foods... yet it is elegant and yummy and rich.
1/2 cup dry white wine
1/4 cup chopped shallots
1 container (10 oz) alfredo sauce, refrigerated section
1/2 cup canned pumpkin
1 tsp ground sage
18 oz frozen cheese ravioli (can used fresh or even dried)
2 T green onion
Heat pasta water and prepare according to package.
Cook wine and shallots in medium pan over low heat. stir until reduced to 1 T.
Stir in alfredo sauce, pumpkin and sage.
Cook until heated through.
Drain pasta, reserving 1/4 cup water for sauce.
Stir water into sauce.
Toss sauce with pasta, sprinkle with green onion and season with salt and pepper.
