There's Always Room for JELL-O!

Jell-o came out with a limited edition instant pudding - pumpkin spice-- for the fall/winter 2008 holidays.  It is scarce, found only in a few locations, (Wal-Mart does carry them, although not a LOT of them and usually on an endcap, not with the classic jell-o).
But this pudding mix is interesting.  It does not contain any pumpkin!  It is only the spices of a traditional pumpkin pie - cinnamon and ginger.  But I heard the rumors of how great it is and had to try it...
So here is one recipe to try and I will post more over the next few days.

Triple Layer Pumpkin Spice Pie courtesy of Jell-O with my variations.
2 cups cold milk
1/4 tsp cinnamon
1 graham cracker crust
2 pkgs Jello Pumpkin spice instant pudding (the 4 serving size each)
1/2 tsp vanilla
2 T pumpkin from a can
1 tub peanut brittle
1/2 cup peanut brittle, crushed

Beat milk, dry pudding mixes, cinnamon and pumpkin.  When blended, stir in vanilla.  Set aside a generous half cup of pudding and spread the rest in the bottom of the pie crust.
Mix the cool whip and remaining 1/2 cup of pudding.  Fold lightly.
Spoon into crust over first layer.
Chill in fridge 1 hour.
Just before serving, sprinkle with crushed peanut brittle.
