Cake Pops


M asked for the recipe for cake pops. They are very easy and can be made in many, many flavors.  They do take time, however, so TAKE THE TIME, don't rush it or it will be a disaster.
You can speed things along, by using the freezer, not the refrigerator.  It will cut the time drastically.
Here is the recipe I followed.

Cake Balls
1 yellow cake baked from mix in a 13 x 9" pan
1 tub of cream cheese frosting
2 bags of chocolate colored drops (purchased in the craft store)...looks like chocolate
1 bag lollypop sticks (purchased in craft store)

Crumble the COOLED cake.  Make sure it is room temp.
With a mixer, blend in the tub of frosting.
Scoop the cake into 1" balls, gently and quickly.  Stick a lollypop stick in each (optional).
Place on cookie sheet lined with wax paper.
Immediately place in fridge for 3 hours (or overnight) or freeze for 30 minutes.
Melt chocolate in double boiler.
Dip each ball in chocolate and return to wax paper. (If you want to decorate with sprinkles, do so now.)
Chill in fridge.

Variations:  
Chocolate cake mix, chocolate frosting - chocolate outside = makes very chocolate-y truffle.
Strawberry cake mix, cream cheese frosting - white chocolate = strawberry shortcake
white cake mix, white frosting - white chocolate =good for wedding shower
