Christmas Day

We had a fantastic Christmas day.
Dad and M joined us for dinner, Wii bowling and tennis and dessert.  We laughed and talked and cheered.  Very fun day.
Our dinner menu was
Roast Rib of Beef
Salad with Green Olives, Radishes and Lemon Vinaigrette
Steamed Garlic String Beans
Dilled Carrots
Beer Bread
Roasted Potatoes
Beef Gravy

Dessert was dulce de leche rolled in almond biscotti crumbs with homemade fudge sauce.

We played Wii bowling.  M bowled a "turkey" and won the match!  Ash bowled so many strikes, we were amazed!  Dad played so well and Allie gave it her all.  Allie's Wii tennis is just like her on court game... We had a great day.

Recipe for easy homemade hot fudge sauce

12 oz evaporated milk
2/3 cups chocolate chips
1/4 cup butter
2 cups powdered sugar
2 tsp vanilla extract

Heat evaporated milk, chocolate and butter in a saucepan over low heat.
Once mixture starts to boil (calmly boil, not rolling boil)
Add powdered sugar and stir until combined.
Cook for an additional 8-10 minutes until thickened.
Stir in vanilla.
Cool and refrigerate until ready to use.

I think I would really enjoy the bowling! I can't wait to come down and try it. Hmmm...(thinking of when we can visit...haha).
