I loved the salad and recreated it at home. The secret is the sauce! There are 3 components to this dish, the sauce, the pasta and the vegetables. Use any assortment of vegetables.
Noodle Salad with Peanut Dressing
8 oz linguine (half a box)
1 bell pepper, cut into matchstick strips
1/2 bunch chopped green onions
1/4 cup chopped parsley (cilantro is traditional, but we don't care for it)
1/4 cup carrots, julienned
sliced Chinese cabbage
1/4 cup chopped peanuts
6 T creamy peanut butter
1/4 cup chicken broth
3 T rice vinegar
3 T soy sauce (reduced salt)
2 T sugar
1 T sesame oil
1 dash red pepper flakes or cayenne pepper
2 cloves garlic, minced
1 tsp lime juice
Cook pasta according to directions. Drain in colander. Run cold water over and chill. Set aside.
Prepare vegetables (except peanuts) and combine with pasta. Return to fridge.
To make sauce, combine all ingredients in saucepan. Whisk until smooth over low heat and cool. Chill in fridge until ready to serve.
When ready to serve, combine sauce with pasta and vegetables. Top with peanuts and serve.
Can be served cold, room temp or heated....
