Sometimes, I just want a tasty cookie. Not a perfect chocolate dipped sensation that is really a dessert, but a rugged cookie that satisfies a small craving for something sweet and filling. Oh, and want it to taste real - no artificial flavorings, no shortening.
Here is one recipe that I modified from a canister of old fashioned oats....
Blueberry Walnut White-Chocolate Cookies
1 cup butter, soft so that you can leave an indent in it with your thumb
1 cup sugar
1 cup brown sugar
2 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1 tsp salt
3 cups old fashioned oats, ground in a food processor until it looks like course sand
1 cup chopped walnuts
1 cup dried blueberries (substitute cranberries, cherries, apricots, raisins or figs)
1/2 cup white chocolate chunks or chips
Cream butter until smooth. Add the sugars and cream until fluffy.
Mix in eggs and vanilla.
Slowly, stir in flour, baking soda and salt.
Once combined, stir in oats and walnuts.
Once combined stir in blueberries & white chocolate chips
Scoop by rounded teaspoon onto a parchment lined cookie sheet and bake at 350 for 12 - 15 min. The house will smell yummy while they are baking and the uncooked dough.... well it is heavenly.
