Blondies.....Oh So Yummy

Blondies are bar cookies -- just like brownies, but without the cocoa component. Of course, they are speckled with chocolate chips, or in this case, MnM's so there are chocolates in my blondies, but there doesn't have to be. Blondies can be made without chocolate chips, chopped toffee or MnM's. Some people use chopped nuts to give them texture, others add nothing and enjoy the caramel like flavor that comes from the brown sugar. Any way, blondies are just delicious.

2/3 cup butter
2 cups packed brown sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Optional 1 - 1 1/2 cups chopped nuts or chocolate chips or chocolate chunks or candy bar pieces, chopped

Preheat oven to 350 and grease a 13x9x2 baking pan. (I like to line it with foil).
In a medium saucepan, melt butter and add brown sugar and stir until smooth.
Cool slightly.
Stir in the eggs.
Then add the remaining ingredients, except for the nuts or chocolate.

Spread into prepared pan. Sprinkle with optional ingredients.
Bake for 25 - 30 minutes until wooden toothpick poked inside the center comes out without batter stuck to it.
Cool. Cut into bars while warm.
