Good News...

In September, King Arthur Flour will release unbleached cake flour! YAY!
It will be available in grocery stores and at KA. Bleached flours are different than non-bleached, in that they go through a chemical process to make it very white -- or bleached. Bleached flours are aesthetically more pleasing and that is why they are made. However, they cook up differently, bleached flour - lofty and dry with a fine crumb, like a wedding cake. Whereas, unbleached flour bakes up with a medium crumb and is moist.
Did you know that bleached flours are banned in Europe?
