Watermelon Recipes!

Watermelon is a great fruit to make salsas. These salsas can serve as a "dip" for tortilla chips or as a side dish for pork, chicken or veal.
Watermelon combines well with pineapple, hot peppers and cucumbers. Cut the watermelon to small dice size squares for an appealing serving suggestion.

Watermelon Salsa

1 lime
2 cups diced watermelon
1 cup cucumber, peeled and diced
1/4 green onions or sweet onion, chopped
2 T fresh parsley
2 tsp jalapenos, chopped
salt & pepper
1 tsp sugar

Juice the lime and combine all ingredients. Chill in fridge. Delicious plain or as a side to chicken or pork.

Fire & Ice Salsa - I love this name!

3 cups chopped watermelon
1/2 cup green pepper, chopped
2 T lime juice
1 T chopped parsley
1 T chopped green onion
1 T chopped jalapeno pepper

Cover and refrigerate for 1 hour

Watermelon & Pineapple Salsa

2 cups watermelon, chopped
2 cups pineapple, chopped
1/2 cup red onion, minced
3 T parsley
1/4 cup lemon juice
salt and pepper
2 tsp sugar
Combine all ingredients and stir.
