They yeast, baking powder and baking soda!
I made them as a dessert, even though they would be a delicious snack with coffee or tea. They are not very sweet and you can make them less sweet by reducing the sugar further. After they are baked, sprinkle them with powdered sugar or serve with a lovely mocha sauce as I did tonight!
1 package active dry yeast
1/3 cup sugar
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
4 T butter
3/4 cup buttermilk
Proof yeast in a bowl in the warm water. Add 1 tsp of the sugar. Let sit for 5 minutes, yeast will become foamy.
In a large bowl, mix flour, remaining sugar, salt, baking powder, baking soda. Cut butter into the flour mixture until it looks like crumbs.
Combine egg and buttermilk. Stir into flour mixture until mostly blended. Stir in yeast. (You may need to add more flour, if mixture is too sticky). Turn onto floured board and knead until well blended. Return to bowl and let rise in a somewhat warm area for 30 minutes to 1 hour.
Punch down dough and roll out. Cut into whatever size squares you like. (I made 2 inch squares.) Place on parchment lined baking sheet and let rise another 30 -45 minutes.
Bake at 400 for 10 minutes for 2" squares. Pillows will become golden around the edges.
Remove from oven. Let cool for just a few minutes, then transfer to a platter and sprinkle with powdered sugar.
Mocha Dip - Combine 2 cups milk, 1 tsp instant coffee, 1 T cornstarch. Let mixture simmer for 5 minutes, it will thicken. Turn off the heat. Stir in 1/2 cup chocolate chips and 1 tsp vanilla. Serve with powdered pillows.
