Shortly after Allie was born, Mrs. Murray came over and brought a plate of chocolate covered, gooey marshmallow and peanut brownies. They looked irresistible, but I couldn't eat them because I was nursing Allie and she was colicky. The doctor suggested watching my diet - no dairy, garlic or chocolate! So, I asked for the recipe and waited patiently for months until I no longer had the dietary restrictions. It was worth the wait! These brownies were so delicious that even a small 1/2 inch cube is enough to satisfy a chocolate craving!
I modified her recipe by eliminating the peanuts - Jon is not a fan of nuts in his desserts - and using a brownie mix to make it so much easier!
Here is my modified recipe:
1 pkg brownie mix
(ingredients for brownies, according to the box - usually 2 eggs, vegetable oil & water)
2 1/4 cups mini marshmallows
1 1/2 cups chocolate chips
1 cup peanut butter
1 T butter
1 1/2 cups rice krispie cereal
Preheat oven to 350.
Prepared brownies according to directions. 3 minutes before they are finished baking, remove pan from oven and sprinkle with marshmallows, return to oven and bake 3 minutes.
While brownies are baking, melt chocolate chips, peanut butter and butter in the microwave oven for 30 seconds, then 20 second intervals until melted, stirring between each interval.
Stir in rice krispies.
Remove pan from oven and spread melted chocolate mixture over marshmallows.
Let cool and then place in refrigerator for 2 hours until thoroughly cooled.
Cut into tiny cubes.
