Recipe: Roasted Broccoli

Fall is the perfect time for warmer, heavier foods than we enjoyed all summer.  Roasted vegetables are an easy way to prepare them.
Normally, I roast cauliflower, brussels sprouts and the usual - potatoes.  And they are delicious.
But, did you know that you can roast broccoli?  It is easy and delicious!
It is almost so easy that you don't even need a recipe.  The broccoli browns slightly, but that is just the natural sugars caramelizing.  Roasted broccoli tastes a lot like steamed broccoli, but the flavor is more intense.  The broccoli turns slightly chewy and still maintains a little crunch.
Roasted Broccoli

1 head broccoli, trimmed
salt and pepper
olive oil, 1/4 cup
3 cloves garlic, chopped

Wash broccoli and trim it to whatever size pieces you like. I cut each floret apart.
Place on a parchment lined cookie sheet.
Drizzle with olive oil and sprinkle with salt and pepper.
Roast at 400 for 25 minutes.
Sprinkle with garlic and return to oven for another 5 minutes.

The broccoli should be slightly browned when done.
