Recipe: Peanut Butter Dipping Sauce

Last night, Ashley made a delicious dinner of mildly spicy peanut sauce, grilled chicken and sliced strawberries.
I challenged Ashley with this recipe from and she modified it slightly and made it heavenly!

You can toss it with noodles, marinate meat or serve it with sticks of chicken!  Delicious.  (If you prefer a perfectly smooth sauce, puree the onion and garlic in the food processor.)

1 onion, finely chopped
2 T olive oil
3 cloves of garlic, minced
1/2 cup water
1/4 cup creamy peanut butter
1 T brown sugar
1/2 tsp chili powder
2 T lemon juice
2 T soy sauce
1/4 tsp salt

In a small saucepan, saute onion in oil until tender.  Stir in garlic and cook for 1 minute.
Add the water, peanut butter, sugar and chili powder and whisk until smooth.  Cook until thickened for 2 -3 minutes simmering.
Take off the heat and stir in lemon juice, soy sauce and salt.
Serve immediately or keep warm until serving.
