Guacamole is a dip made from avocados that was first made in Mexico by the Aztecs in the 16th century. (Interestingly, they made it for the Spanish conquistadors who then brought it to Spain.)
Centuries later, it made it's way up to NH to us Yankees.
Guacamole recipes vary considerably. There are so many options, all a matter of personal taste.
Texture, tang, sweetness, saltiness, chunks, spice? Where to start?
Here is a basic recipe that I LOVE.
The delicious flavor of the avocado takes center stage. It is slightly tangy as the lemon serves a dual purpose: to add tang and to prevent the avocado from turning brown. I add just a 1/2 tsp of sugar to counteract the lemon and a pinch of salt to bring it all together. Optionally, I will chop up some tomatoes and add them in. But, if I want more of a kick, but not heat, I will add a spoonful of prepared salsa. The salsa adds a little onion, tomato and vinegar.
Some people will add jalapenos, crushed garlic and lots of tomato. Feel free and experiment with the flavors you like.
Oh - I use a simple fork to mash up the avocado. This way, the avocado has some tooth, isn't a slurry and is delicious.
Now, as to making it in advance.... this can be done. The best thing to do is to make it fresh. If you make it early in the day, simply place plastic wrap on top of the guac and then seal it in a container. You want to prevent the air from reaching it. Then refrigerate it until ready to serve.
If you have a plethora of avocado, freeze the skinned and slice avocado in a container. Squeeze fresh lemon juice over the avocado pieces and cover, (either in a plastic bag or in a freezable container). Then, when you want to make the guacamole, thaw the avocado in the container, all wrapped up until mostly thawed. Drain off the liquid that will form.
Then, use the freshly thawed avocado to make into guacamole.
1/4 lemon (or more to taste)
1 pinch of salt
1/2 tsp sugar
1 T finely chopped tomatoes or 1 T salsa
1 T chopped parsley (I prefer parsley over cilantro)
1 T chopped onion
1 T chopped garlic
1 T chopped jalapeno
Peel the avocado and cut into big chunks. Sprinkle with lemon juice. Add sugar and salt. Mash to desired consistency. Stir in the chopped tomatoes or salsa, jalapenos, garlic, chopped onion or parsley if using.
