Sandwich Spreads

Sandwich Spreads in the US are primarily butter, mustard and mayonnaise.  And in some parts of the country Miracle Whip Salad Dressing (a sweetened mayonnaise) is very popular. These function, not only as added flavor, but as added moisture to a sandwich.
Spreads transform a dry sandwich into a pleasingly tangy and smooth meal.

Sandwich spreads can be altered in easy ways to create an unexpected flavor twists.

Mayonnaise - Here are a few ideas to doctor up mayonnaise, just whirl all the ingredients in a blender or food processor:

Basil Mayo - 1/2 cup mayo, 2 T red wine vinegar, 1/4 cup fresh basil 
Chipotle Mayo - 1 clove garlic, 2 tsp lime juice, 1/2 cup mayo, 1 T chipotle adobo sauce, 1/2 chipotle pepper
Saffron Mayo - Soak a pinch of saffron threads in 1 T hot water, then add to 1/2 cup mayonaise
Tarragon Mustard Mayo - 1/4 cup tarragon, 1/4 cup mustard, 1/2 cup mayonaise
Cilantro -Lime - 1/2 cup mayonaise, 2 T lime juice, 1/4 cup cilantro
Garlic Mayo - 4 cloves garlic, 1 tsp salt, 1/2 cup mayo
Mustard Caper - 1/2 cup mayo, 3 T Dijon mustard, 2 T capers, 1 anchovy, 1 T parsley
Wasabi Mayo - 1/2 cup mayo, 1 T prepared wasabi
Red Pepper - 3 roasted red peppers, drained + 1/2 cup mayonaise
Caesar Mayo - 1 clove garlic, 1 anchovy, 1 dash Worcestershire sauce,  3 T Parmigiano cheese, 1/2 cup mayo
Tartar - 1/2 cup mayo, 2 T pickled relish, 1 T chopped onion

Butter - Flavored Butters can enhance the flavor of sandwiches when used as a spread inside the sandwich or on the outside to grill the sandwich:
Combine softened butter with the flavorings (mince or chop all herbs and vegetables), spread in a crock.

Sun Dried Tomato Butter - 1/2 cup butter, 1 garlic clove, 2 T sun dried tomatoes, 1/4 cup parsley
Lemon Dill Butter - 1/3 cup butter, 1 T green onion, 1/2 tsp dried dill, 2 T lemon zest
Dill Butter - 1 tsp chopped fresh dill, 1/2 cup butter
Olive Butter - 1/2 cup butter, 4 T chopped olives, 1/2 tsp lemon juice
Onion Parmesan - 1/2 cup butter, 2 T Parmesan cheese, 2 tsp sliced green onions 
Parsley Butter - 1/2 cup butter, 3 cloves garlic, 1/4 cup parsley
Spicy Butter - 1/2 cup butter, 4 drops Tabasco
Blue Cheese Butter - 1/2 cup butter, 1/3 cup crumbled blue cheese, 1/3 cup parsley, 1 clove garlic
BBQ Butter - 1/2 cup butter, 1/2 tsp pepper, 2 T BBQ sauce

Cranberry Butter- 2 T cranberries, 2 T maple syrup, 1/2 cup butter
Ginger Pecan Butter - 1/2 cup butter, 1/4 cup ground pecans, 1 T crystallized ginger, 1/2 tsp brown sugar
Maple Butter - 1/2 cup butter, 1/4 cup maple syrup
Orange Butter - 1/2 cup butter, 1 T orange juice, 1 tsp orange zest


Cream Cheese - Cream Cheese based spreads are great as a simple topping on breads, toasts and as a filling for tea sandwiches. Combine all ingredients, blend to desired consistency or just chop ingredients and add to an 8 oz block cream cheese.

Lemon - 2 T lemon juice, 1 T lemon zest, 1 T powdered sugar
Strawberry- 1/2 cup sliced strawberries, 1 T powdered sugar
Peach - 1/2 cup peeled and diced peaches, 1 T lemon juice, 1 T powdered sugar
Cinnamon - 3 T brown sugar, 1 tsp cinnamon


Hot Pepper - 1 or 2 jalapenos, seeded and chopped, 2 T chives
Herb - 1 tsp rosemary, 1 T chopped green onion, 1/2 tsp paprika
Lox - 1 oz minced lox, 1/4 cup minced onion, 2 T capers
