Recipe: Olive Spread

The Summer Tennis Season has started, known around here as the CTA (Community Tennis Association) and that means good food!
Wednesday nights are dedicated to women's matches.  Tuesdays are for men's matches and we bring food for after the match socializing.  Men usually are happy with cold beer and chips, but the women bring tasty treats.
Wednesday was our first match of the season.  My partner, Natasha was wonderful and we had a fun time on the court.  Afterwards, we had appetizers, iced tea and cold beer.... So, maybe we are not so different from the men after all!
I brought an olive spread and some melba toasts.  It was delicious and came out very well.
Make the spread in advance, even a day before as it gives the flavors a chance to marry.

1 8 oz tub whipped cream cheese or 1 8 oz bar cream cheese, softened
1 can black olives, drained
1 T fresh rosemary
1 T fresh parsley
3 T chopped fresh dill
1 clove garlic, minced
salt and pepper
2 tsp olive oil

Set aside about a dozen olives for garnish, but puree the remaining olives with herbs.  Add the garlic and salt and pepper.  Stir to combine.  Taste and season as needed.  Place in a pretty bowl and top with sliced olives for garnish. Drizzle with olive oil, cover with plastic wrap and refrigerate until ready to serve.
