Recipe: Arugula Salad with Garlic Dressing

Another day, another recipe. This is a delicious salad that is versatile and tangy!
I used strawberries as a base, but you can leave them out or replace them with something else, like blackberries or even blue cheese!
 Make the dressing first, as it gets better with age.  The dressing is so easy to make. It uses 4 simple ingredients - smashed garlic, apple cider vinegar, honey and olive oil.  Combine your dressing ingredients in a jar or bowl and let sit while you prepare your salad. The combination of flavors make this salad so tangy, salty Prosciutto, rich dates, spicy arugula and the tangy dressing..... Yum, yum, yum.
 Arugula Salad with Prosciutto, Dates and Green Onions

12 -16 oz arugula, washed and dried (or more to taste)
2/3 cup chopped dates or chopped figs
1/3 cup sliced green onions (also called scallions)
4 oz Prosciutto, chilled till firm and then sliced and chopped into bite size pieces
3 cups sliced strawberries (optional)
salt and pepper
Garlic Vinaigrette

Place arugula in a large salad bowl.  Add figs, onions and prosciutto.  Toss until well combined.  Add dressing.  Add salt and pepper and toss well.
Place a bed of strawberries on a serving plate (I use shallow pasta bowls.)  Place a heaping scoop of salad on top of berries and enjoy.

Garlic Dressing
1/2 cup apple cider vinegar
1/3 cup olive oil
1 - 2 smashed garlic cloves
1 - 2 T honey to taste

Combine all dressing ingredients in a jar and shake to combine.  If using a bowl, whisk all ingredients together.  Let sit for at least 20 minutes.
