Recipe:Mixed Salad with Chickpeas, Cukes, Avocado and Bacon

 Here is a lovely salad that makes the meal!  The combinations of flavors - smoky bacon, mild chickpeas, creamy avocado and crunchy cucumber add a tasty depth to this salad.  I used a simple vinaigrette on top and it was delicious.  A nice summer meal.

Mixed Salad with Chickpeas, Cukes, Avocado and Bacon

Mixed greens, (I used mesclun and romaine)
1 cup chickpeas, rinsed
1 avocado, cubed
1 tomato, cubed
1 cucumber, peeled and cubed
1 cup vinaigrette (or more or less to taste)
6 strips bacon, cooked up crisp and then broken into pieces

Mix vinaigrette with cubed avocado.  (This will prevent the avocado from turning brown.  Add chickpeas and cucumber.  Combine salad with tomato and dressing mixture.  Toss salad.  Top with bacon.
