How can you not love eating food on a stick? Maybe I love it because it is reminiscent of childhood favorites like candy apples or cotton candy or maybe unusual treats like kebabs. But, eating food on sticks is fun. Caprese Salad is one of my favorites and doesn't need any help getting better, but why not try it on a stick anyway?
Thread an extra long toothpick (a tiny bamboo skewer) with mozzarella balls and cherry tomatoes and then add a few spoonfuls of basil vinaigrette. Easy and delicious and the prep work can be done early, just add the dressing before serving.
You can use the basil vinaigrette recipe from this post or make a simpler one.
Combine 1 part olive oil, 2 parts vinegar and 1 part basil leaves. Sprinkle with salt and pepper.
Blend until smooth.
Place your skewers full of tomatoes and mozzarella on a serving tray. Drizzle with dressing.
