Butternut Squash Recipes from Around the Web
Butternut squash is high in fiber and vitamins A, C and E. It also has high amounts of thiamin, niacin, vitamin B6, magnesium, potassium and manganese.
Butternut squash recipes are often paired with maple syrup and brown sugar. But, candied is not the only way to bring out the natural sweetness of the squash. Roasting the squash caramelizes the natural sugars and this adds an element of depth to many recipes.

Butternut Squash Risotto with Sugared Walnuts from myrecipes.com pairs roasted butternut squash with arborio rice, Parmigiano cheese, garlic, sage and pancetta. The topping is a freshly made toasted walnuts with a light brown sugar coating. I can't wait to make this one!
Stuffed Butternut Squash with Wild Rice and Apricots - from the Chicago Tribune uses a bunch of delicious ingredients to make a lovely fall dish. Apples, apricots, sage, garlic, pine nuts and wild rice make for a delicious dish.
Warm Butternut Squash and Arugula Salad from thekitchn.com gives the recipe for a delicious spiced salad where warm spiced squashed is served over greens, causing them to wilt slightly. It is topped with an apple cider dressing. Yum!
