Recipe: Green Salad with Blueberries and Peaches

I think that many good recipes are the product of necessity.  This salad recipe is one of them. And it is delicious, mainly because it uses in season produce.   I made the salad, spur of the moment, intending to make a traditional green salad, but remembered that I had ripe peaches and fresh blueberries. I didn't even think to take a photo and regretted that soon after tasting it!
This is a great summer recipe using ripe peaches (or nectarines) blueberries (or raspberries) fresh red onion and salad greens.
I made the dressing using blueberry jam which brought out the blueberries from the salad and tied it all together.
Green Salad with Blueberries and Peaches
4-6 cups salad greens
1 - 2 sliced peaches, chopped in half
3/4 - 1 pint fresh blueberries
1 red onion, sliced
1/4 cup balsamic vinegar
2 T olive oil
1 T blueberry jam

Divide sliced red onion in 2 parts and finely chop half of the onion slices.  Place them in a small bowl.  Pour the balsamic vinegar over the chopped onions and add a handful of blueberries.  Drizzle the olive oil on the mixture, the blueberry jam and salt and pepper to taste. Set aside.

In a salad bowl, combine the washed and dried greens, sliced onion, peaches and remaining blueberries.  Add salad dressing right before serving and toss the salad.  Serve immediately.
