Recipe: Peach Salsa

I made a modified peach salsa recipe from yesterday's recipe round-up post of peach recipes.  The original recipe comes from Simply Recipes for Peach Salsa Recipe.
I made a few changes: omitting the sugar and ginger and chopping the peach larger and it was amazing!
This would be good as a side dish as a relish or just eating with a spoon!
Peach Salsa

4-5 peaches, sliced in half then chopped
1/2 diced red onion
4 T mint leaves, chopped well
3T jalapeño, chopped
2 limes, juiced
salt and pepper

Combine and let rest in fridge for 2 hours or at room temperature for 30 minutes.  Delicious.
Add more chopped jalapeños for added kick!
