Pumpkin: Recipe Round Up

While New England is known for it's beautiful foliage, it barely softens the blow for the upcoming winter. Summers provide unpredictable weather -- rains, droughts, cold temperatures, scorchers, but autumn brings cool days and cold nights.  Sure, we have a few days of Indian Summer, like today which reached 90 degrees, but for the most part autumn in New England is beautiful.  Ask New Englanders to name three colors they associate with autumn and you'll hear red, orange and yellow from the majority. It's easy to see why, our trees turn fabulous shades of these colors, but it's the pumpkins that are really colorful.
Pumpkins (and squashes) are one of the best things about autumn and retailers such as Starbucks, Dunkin Donuts and Cheesecake Factory have picked up on this trend and incorporated pumpkin into their products. Some varieties are better than others, but I for one, love pumpkin.

The Krazy Coupon Lady offers a recipe for Impossible Pumpkin Pie Cupcakes that look like individual pies. Her recipe calls for pumpkin puree and the usual spices and flour.  This one looks like a treat for Thanksgiving.
Prevention RD gives a recipe for Pumpkin Pie Fudge using evaporated milk, white chips and marshmallow fluff. While her recipes are great for diabetics, with this one she stresses moderation.
My Baking Addiction features Pumpkin Molasses Sandwich Cookies and this are ones I will make soon. The filling is a cream cheese frosting and the combination of cream cheese with pumpkin is heavenly.
Lastly, Baker's Royale offers Seven Layer Magic Pumpkin Bars.  Seven layers. Are you ready for this? Pumpkin. Apples, Coconut, Almonds, Chocolate Chips, Graham Crackers and a spice layer of cinnamon, nutmeg and cloves.  Oh, boy, do these sound decadent!
