Illustrated Recipe: Madeleines

Here's a recipe for a traditional cookie/pastry that is deceptively elegant and so easy to prepare. The cookies are more like little cakes, almost like individual pound cakes in a shell design. Technically, the batter is considered a genoise or sponge cake, but unlike many sponge recipes, the eggs do not have to be separated in this one. Madeleines are beautiful and made from simple ingredients: eggs, sugar, flour and butter.
