It's made using flour, baking powder, baking soda, eggs, milk and Greek Yogurt and it is delicious. The pancakes have a chewy texture, but are not tough. They are light and flavorful. I used vanilla yogurt since that is what we had on hand, but any flavor of yogurt can be used to great results.
1 1/2 cups flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup milk
1/2 cup Greek yogurt
NH maple syrup for serving (or any syrup you prefer)
Combine dry ingredients in a bowl.
In a separate bowl combine egg, milk, yogurt.
Combine both mixtures, but do not over mix.
Heat a nonstick fry pan over medium heat. Add pat of butter and when melted cook pancakes using 1/2 cup scoop in pan. When bubbles form in pancakes, flip and cook on other side.
Serve immediately with maple syrup.
