Recipe: Cornmeal Waffles with Banana Topping

We loved cornmeal: polenta, corn muffins, cornbread... It's delicious, adds a subtle sweetness, a bit of tooth and some texture that transforms baked goods into something more.
I wanted to make some waffles and thought... how about cornmeal waffles? Then how about with a banana whiskey topping? The waffles have no sugar so all the sweetness comes from the topping. I used Greek Yogurt, but you can replace it with milk, if you prefer. If you're not thrilled with a whiskey sauce, just use maple syrup.
Cornmeal Waffles with a Simple Banana Whiskey Topping
serves 4
1 cup cornmeal
1 cup flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3 eggs
1 cup milk
1 cup Greek Yogurt

Waffle Iron

Combine cornmeal, flour, baking powder. baking soda and salt. Mix in eggs, yogurt and milk.
Spoon batter onto hot waffle iron. Cook according to waffle iron directions.
Serve with sauce.

Topping: 4 T butter, 1/2 cup brown sugar, 2 T Whiskey, 2 bananas, sliced

Topping - In a skillet, melt butter and add brown sugar. When bubbling add whiskey and let cook down. Add sliced bananas and coat with with syrup. Serve immediately.
