Recipe: Tomato and Peach Salad

I made a dish for a dinner party, Tomato and Peach Salad, and loved the combination of peaches and tomatoes. I've made it since, a few times, and loved the splash of vinegar on the tomatoes and peaches. I've altered the recipe each time, sometimes adding mozzarella, or cucumber or even avocado. It's a great blend of flavors and I love the combination of summer produce.
Tomato and Peach Salad

2 tomatoes, sliced
2 peaches, sliced
1 sliced avocado
1 cucumber, peeled, sliced and chopped
8 oz fresh mozzarella, sliced
1/4 cup red wine vinegar
3 T olive oil
salt and pepper

Arrange tomatoes, peaches, avocado, cucumber and mozzarella on a plate or platter.
Sprinkle with salt and pepper. Drizzle with vinegar and oil.
Serve.
