Recipe: Caprese Salad with Basil Vinaigrette

Caprese Salad is an Italian staple that anytime tomatoes are ripe. The classic combination of tomato, basil and fresh mozzarella is light, delicious, and a meal in itself. It's an easy dish to assemble as it requires no cooking, just preparation. Variations abound. Just add any other fresh produce, such as avocado, cucumber, and onion.
Any dressing is meant to enhance the flavors. Anything as simple as sprinkles of salt and pepper would be delicious, as would a basil vinaigrette I like to make.

Caprese Salad

2-3 Fresh Tomatoes, sliced
8 oz fresh mozzarella, sliced
fresh basil
1 English cucumber, peeled and sliced

Arrange all ingredients on a platter. Sprinkle with salt and pepper and drizzle with vinaigrette.

Dressing:
1/2 cup olive oil
16 basil leaves or more to taste
1/2 cup vinegar
1 shallot, chopped

Blend all ingredients in blender. Refrigerate at least 20 minutes or until ready to use. Dressing will keep overnight.
