Recipe: Caprese Salad with Basil Vinaigrette
Any dressing is meant to enhance the flavors. Anything as simple as sprinkles of salt and pepper would be delicious, as would a basil vinaigrette I like to make.
2-3 Fresh Tomatoes, sliced
8 oz fresh mozzarella, sliced
1 English cucumber, peeled and sliced
Arrange all ingredients on a platter. Sprinkle with salt and pepper and drizzle with vinaigrette.
1/2 cup olive oil
16 basil leaves or more to taste
1/2 cup vinegar
1 shallot, chopped
Blend all ingredients in blender. Refrigerate at least 20 minutes or until ready to use. Dressing will keep overnight.
