Savory Oatmeal: Broccoli and Cheddar Oatmeal

 
For the seventh day of the savory oatmeal recipes, we have one that is pure comfort food. Broccoli and Cheddar Oatmeal is a take on the classic soup. I used chicken broth, but if you want to keep it strictly vegetarian, use vegetable broth instead.
Broccoli and Cheddar Oatmeal

1/2 cup oats
2 T butter
1 shallot, minced
2 T flour
1 cup chicken broth
2 T milk or cream
1 cup broccoli florets, steamed and chopped
1/4 grated cheese, (I used a combination of cheddar, Parmesan

Make the broccoli and cheddar sauce by heating the butter in a saucepan and adding the shallots. Cook until fragrant and sizzling, then stir in the flour until it forms a paste and cook while it steams/sizzles, stirring continuously. Season with salt and pepper. Cook until mixture turns a light caramel color and slowly add in the warmed chicken broth. Stir continuously with a wire whisk until mixture simmers.
Stir in milk, then add grated cheese and stir until cheese is melted. Mix in cooked broccoli. Remove from heat and cover.
Cook oats according to package directions.
Place oatmeal in a bowl and top with as much sauce as desired.

Day 4 - Oatmeal with Roasted Tomatoes, Garlic and String Beans
Day 3 - Oatmeal with Garlic, Corn, and Jalapeños 
Day 2 - Oatmeal with Carrots, Edamame, and Goat Cheese
Day 1 - Oatmeal with Cheddar Cheese, Green Onions, and Soy Sauce
