Savory Oatmeal: Egg Fried Oatmeal with English Mustard

This recipe is a take on the classic Chinese Fried Rice dish using oats instead of rice. The oatmeal with it's simple flavors take on the garlic, soy, and sesame flavors nicely.
This recipe uses cooked and refrigerated oatmeal, so it's a good idea to make an extra portion of oatmeal the day before you plan on making this dish. 

1/2 cup oats, cooked according to directions on canister and refrigerated overnight
1 shallot, minced
1 clove garlic, minced
1 carrot, chopped and steamed
3 T frozen peas
1 T butter
2 T soy sauce
1 tsp sesame seeds
1 T English mustard

 Heat a skillet and add 1/2 T butter, shallot and garlic. Stir until fragrant. Add cooked oats. It will be a solid mass (almost like a steak) at first, but break it up with a spatula to make it rice like in texture. As it cooks, the oatmeal will soften and become like a paste. When this happens, stir in remaining butter, peas and carrots. Continue to stir until heated through. Add soy sauce and continue to stir until heated through. Season with additional sauce if necessary  and sprinkle with pepper. Add sesame seeds and place in a bowl. Drizzle with English Mustard. Serve.
