Today's recipe uses a fresh, tangy, apple chutney and smooth Brie cheese to give the oatmeal a savory bite. Make the chutney as spicy as you like by adding more red pepper flakes or omit them altogether.
1/2 cup oatmeal
1 T olive oil
1 apple, peeled and chopped
1 shallot, chopped
1 T fresh ginger, minced
1/8 tsp red pepper flakes (optional)
2 T raisins
1/4 cup apple cider vinegar
2 T brown sugar
4-5 slices Brie cheese
2 T cashews, chopped
Prepare oatmeal according to directions on canister. Set aside.
Prepare the skillet in a pan on top of the stove.
Heat olive oil on the stove top and add the apples, shallot, ginger, and red pepper flakes. Cook 4 minutes until fragrant and the apples are softer.
Add the raisins, brown sugar, and apple cider vinegar and allow to cook down, about 3-4 minutes. Season with freshly ground pepper.
Top oatmeal with hot chutney and add a layer of Brie and a sprinkle of cashews.
