Savory Oatmeal: Oatmeal with Carrots, Edamame, and Goat Cheese


Oatmeal topped with sautéed vegetables is a hearty dish for lunch or dinner. This recipe combines edamame and carrots with Goat Cheese as well as garlic. It's a delicious topping, like a hot salad on top of oats.
 Oatmeal with Carrots, Edamame, and Goat Cheese
1/2 cup dried oatmeal
1/2 cup cooked carrots
1/4 cup cooked, shelled edamame (you can substitute peas)
2 cloves garlic
1 T olive oil
2 T goat cheese
salt and pepper

Cook oatmeal on the stove according to directions on the canister.
Meanwhile, heat olive oil in a skillet and heat to medium heat. Sauté edamame and carrots until warm. Add garlic and cook until fragrant. Spoon vegetable mixture on top of the oatmeal.
Sprinkle goat cheese on top and season with salt and pepper.
