Oatmeal with Garlic, Corn, and Jalapeños
1/2 cup dried oats
1/2 cup corn, shaved from the cob Or thawed frozen kernels
1 T olive oil
2 T jalapeño slices, chopped
3 cloves garlic, smashed
1 T grated Parmesan Cheese, grated
Prepare oatmeal according to directions on canister.
Heat a skillet over medium heat and add corn. Cook corn until it heats and sweetens, caramelizes in the pan. Add olive oil and garlic to the corn and sautee until fragrant. Stir in the chopped jalapeños until hot.
Place oatmeal in a bowl.
Spoon on top of the oatmeal and sprinkle with Parmesan cheese.
