Recipe: Grapefruit and Almond Winter Salad

I'm hooked on tennis. I love to play, because every game is different and new, but also, I have been lucky enough to meet wonderful people while doing so! When I play on a team in New Hampshire, we sometimes travel across the state to play a match.
Part of the fun is carpooling with our teammates. We've learned a lot about each other during these two hour trips. Our last match took us to the seacoast area and to a wonderful club with challenging opponents.

The rules require the home team to provide lunch for the visitors. Our opponents not only were great tennis players, but they were also great cooks. They put out a generous spread with sandwiches, fruits, homemade cookies... and this delicious salad.
The salad was as beautiful as it was delicious. It was Christmas colors - with radicchio lettuce, spring mix, spiced almonds, sun dried tomato pieces, pink grapefruit sections, and a slightly citrusy dressing. It was very light, crisp, and zesty.
I wanted to record a recipe to make again later. Serves 4-6 as a side dish
Dressing:
1/4 cup grapefruit juice
2 T apple cider vinegar or red wine vinegar
1 T olive oil
1 tsp honey
salt & pepper
Combine all ingredients in jar and shake. Chill until ready to use, up to 24 hours.

Salad
6 cups spring mix salad or arugula blend
2 cups radicchio lettuce, torn
1/2 cup almonds or Cinnamon spiced almonds
1 grapefruit, peeled, segmented, and chopped
1/3 cup chopped sun dried tomatoes

Combine all salad ingredients. Toss with dressing and serve.
