Recipe: Homemade Pancakes

I love this recipe for simple homemade pancakes. The addition of lemon juice creates a tender batter that is light and tasty. The edges get buttery and crispy.

It's the same idea as the Joy of Cooking recipe that calls for buttermilk. I've found that leftover batter is just as good the next day. How about a nob of butter on the stack before the syrup?
