"Hasselback" Roasting Technique

Have you heard of Hasselback Potatoes?
It's a cooking technique where the potatoes are peeled, sliced partially through, then roasted with a tasty or spicy topping. The toppings include butter, olive oil, garlic, grated cheese, breadcrumbs and the like. The technique of partially slicing the potatoes, causes them to fan open as they roast in the heat. It's an attractive presentation, and it also roasts the edges of each potato slice.
