Menu: Dinner with Girlfriends

Roast Pork Tenderloin with Chimichurri Sauce
Roasted Zucchini
Roasted Garlic Potatoes
Steamed Carrots

Pumpkin Roll with Bourbon Vanilla Frosting

Chimichurri Sauce -
Great accompaniment to pork, beef, or fish. Use as a seasoning for roasted vegetables.
Note - most recipes call for oregano or cilantro added. Since I don't care for the flavor of either, I omit them.

scant 1/2 cup olive oil
1 bunch Italian parsley, washed and dried
3 garlic cloves, crushed
1 tsp red pepper flakes
1/4 cup red wine vinegar
1 tsp cumin
1 tsp salt
1 tsp black pepper
1 shallot, chopped

Blend all ingredients in food processor until smooth.
Cover and refrigerate until smooth. Can be stored for up to a week in the fridge.
